Chicken Stir Fry

What You’ll Need: 4 boneless skinless chicken breasts

1 bag frozen stir fry veggies (any kind) 2 medium tomatoes (& any other veggies you desire) 2 table spoons of olive oil Garlic salt, Pepper (opt.) Lemon pepper or anything else you prefer.

Instructions: In a large frying pan pre-heat oil on med/high heat. Cut chicken into chunks and put them in hot oil, then stir around good to coat all of the chicken. When chicken is white on all sides this is a good time to add onions if you are using them.

Keep stirring until onions show signs of transparency. Then stir in frozen veggies and let cook 3-4 minutes, stir often. Add any other veggies and tomato and stir them in. Start to add the seasoning; sprinkle the top of the mixture with garlic salt and pepper. If you use lemon pepper, sprinkle sparingly (it’s potent). Mix again and lower heat a tad and simmer until all frozen veggies are cooked.

This recipe is good for lunches at work!
